Phu The or matrimony cakes - Bac Ninh province

Legend has it that, under Ly dynasty, Dinh Bang villagers in Tu Son district, Bac Ninh province used their agro-products to make such cakes to worship ancestors on great celebrations.
Once, king Ly thanh Tong and his wife, Y Lan went home to attend ancestoral celebration at temple Do, after trying the cakes, said "From today on, on engagement days or wedding days, the couples have these cakes for everybody." Since then, phu the cake are inseparable on wedding occasions, they symbolise ever-lasting happiness, there are different names to the cakes: phu the, su se.. any name it might be, it always means matrimonial happiness to newlyweds, it's the pride of Dinh Bang villagers who first make the cakes.

Every year, each family spare a part of the land to grow a special kind of sticky-rice, only 4 kilograms of rice flour could be make from 10 kilogram of glutinous rice. The insides are mixture of green peas, sugar, lotus seeds, coconut rice and gradiflora juice, all these ingredients make up this special kind of cake. After wrapping, it comes to be boiled. Boiling is a decisive secret and it's successful by managing the fire and the duration to boil.

Not only nutritious, the cake is tasty and flavoured. Not only the ingredients but the secrets, the hearts and souls to make these cakes that differ from other ones become the pride of Dinh Bang villagers.
